Oreo Brownie Cupcakes, Makes 12
- 1 box brownie mix, 8×8 inch size
- 24 Oreo Cookies
- 1/2 cup creamy peanut butter
- 24 foil cupcake liners
Preheat oven to 350 degrees and line a 12 muffin cup baker with paper liners.
Prepare brownie mix according to package directions. For each cupcake cup spread 1 teaspoon of peanut butter over 2 Oreo cookies and stack them on top of each other. Place oreo stacks into the cupcake lined muffin cups. Spoon 2 tablespoons of brownie batter over each stacked oreos and let it run down the sides of the cookies. If you have left over brownie batter, bake separately in a separate baker or muffin tin. Bake cookies and brownies for 18 to 20 minutes, until brownies are cooked through. Let cool completely then serve.

I went to the supermarket to get all the things needed… unfortunately the brownie mix ran out of stock.
but…. chocolate cake mix saves the day ! It turn out so good… not so sweet, not so rich. (I use only one OREO and less peanut butter…. ok for those who are not into “too sweet ”
….but I am going to try some soon with brownie mix. and will make according to your receipe. I LOVE anything CHOCOLATES !!! TQ again.
I wish i would have read the comments first. After my first attempt did not work so well, try #2 looked great, but when i went to try one, the paper lining stuck to the oreo on the bottom. I’m hoping this won’t be the case for the rest, we will see. USE FOIL NEXT TIME!
I would love to make these for a party this weekend. Do the Oreos stay crunchy after you bake them?
This was very simple to make! My family really enjoyed them too! However, PNB and oreo is not my favorite combination. Next time, I will tweak the recipe and use mint oreo and andes mints instead. ALSO!!! BIG HELPFUL NOTE!!! Make sure to use foil liners, brownies and paper lines do not a combination make! They peel right out of the foil ones.
I’m going to try it with Nutella instead of peanut butter. If your local grocer sells hispanic foods, check to see if they have “dulce de leche” – it’s like a gooey caramel. That would be a good substitute as well.
That is a good question! I might try a chocolate ganache (heavy cream and chocolate) that is more on the firm side. (2 parts chocolate to 1 part cream). Cool in fridge so it hardens (if it is too hard to work with bring to room temperature – it should soften up a bit. Place a scoop on top of the oreos; then proceed. What I’m hoping is that it is baked, and then cooled, the ganache will firm up and and be like a truffle filling. You might also try marshmallow creme. Or a cream cheese filling topping (1 egg, 8 oz. cream cheese, 1/3 cup sugar; beat to combine). I think all have great potential! Thank you for asking! Debra
