Mango Salsa for Fish, Chicken…..Even Chips!

I came across a mango salsa recipe soon after we married and it was my first ‘fancy meal’ for company! 17 years later I still make it when I want to impress.  It’s a very easy fruit salsa recipe that takes about 15 minutes to throw together.  Mango salsa is delicious on most fish, chicken and pork.

Feel free to add/change ingredients to this mango salsa.  And although the recipe above calls for cilantro, it is equally as good with parsley.

Fun Summer Cookies

It’s been at least a week or two since I featured cookies, and you know how much I LOVE to show off fun cookies.  Today, I thought I’d spotlight some summer themed designs.

From Whisk This,  super easy AND cute watermelon cookies… even *I* could make these!  You’ll just need some food coloring for the pink, green and black.  Although we think mini chocolate chips would make great ‘seeds’ too!

From Family Fun, a cute cookie for the beach or ocean theme party… oyster pearl cookies! Most any round cookie will do but if can one with a bit of a design like the ones below – all the better!

 

From Amy Atlas, a FAAAAAAB summer cookie tutorial… with lemon and lime slices, and even a glass of lemonade…cookie style!

 

Now, this next post from Sweetopia is for the die-hard cookie decorators out there… it has some sweet summer cookie inspiration for the novices, and GREAT, GREAT tips on avoiding spots on icing.

Olympic Fever!

Best Guacamole Recipe (at least I think so!)

Summer means guacamole in our house, although as I think about it, this is a wonderful appetizer and garnish year round.  After trying so many homemade guacamole recipe over the years – we’ve come to think of this one as the very best.  I hope you’ll give it a try to see for yourself!

The keys to making this recipe are two-fold: 1) don’t mash the avocados.  Instead, cut the avocados in small pieces and then gently mix all the ingredients together.  The act of mixing will serve to partially mash the avocados while still leaving some good side chunks. 2) Don’t skimp on the cilantro – it really adds to the bright, fresh flavor of this dish.

This healthy guacamole recipe is sure to become a family favorite.

Homemade Guacamole

  • 1 cup of fresh tomatoes, diced
  • 3/4 cup of sweet or red onion, diced
  • 1 cup of cilantro, chopped
  • juice from 1/2 lime, more to taste
  • 3 ripe avocados, peeled and diced
  • kosher salt and freshly ground pepper
  1. In a medium bowl, combine the all ingredients except salt and pepper.  Gently mix until ingredients are combined.  Season with salt and pepper to taste.

Summer Baby Shower Themes and Ideas

I have some super, super sweet baby shower ideas for you today.  Beaches, books, and BRIGHT colors are what these themes are all about…

From Aesthetic Nest comes some FABULOUS inspiration with a Golden Book Baby Shower theme.  These vintage books are easy to find in used-book stores, and what a perfect palate for a party!

Another great BOOK theme idea comes from Martha Stewart.  How about throwing a Mother Goose baby shower, with recipes like Mary Quite Contrary Garden Salad, Peter Piper Pickled PrawnsLittle Boy Blueberry Scones, and Miss Muffet’s Lemon Curd. I recommend setting out a menu card (or menu cards at each item if served buffet) since the recipe names are so cute!

And how about those BEACH baby showers?  Check out the fun ideas from the Hostess blog, with favors, centerpieces and food ideas!  You’ll want to read her entire post because she has fabulous, low cost ideas!

And going along with that, check out this INCREDIBLE sand castle baby shower cake from CakeCentral.com:  It actually isn’t that hard to make yourself (although a bakery could do it easily) – the cake contains two different size cake layers.  The sand can be made from crushed graham crackers (I like crushed Captain Crunch cereal too).  And flip flop cookie cutters can be purchased at most baking stores and online.

And one last inspiration for you, from Pizzazzerie… a preppy pink beach baby shower:  I just loved the hot pink with lime green!
