White Chocolate Cheesecake with Cranberry Topping

I discovered this recipe at Food Network.com a couple years back and am I glad I did – it’s one of the stars of our Thanksgiving (dessert) table!  The cheesecake is heavenly itself – I often top it with different toppings (caramel, dark chocolate) throughout the year.

True Confession:  The recipe below calls for a water bath when cooking the cheesecake.  I always skip this step (I’m not worried if there are a few cracks in the top; the cranberry topping covers it nicely).

I absolutely adore S’mores and think they are meant for more than a summer treat!  So here it is February and I’m enjoying this divine Smores Cheesecake recipe from Southern Lady magazine. You do need a candy thermometer to make this recipe but it is so worth it!

Sopapilla Cheesecake Pie

I’ve had been meaning to make this recipe forever an finally just got around to it.  Well let me tell you – what a mistake !!  This recipe is so fabulous, so delicious, and so relatively easy – it fast moved up to the top of my greatest hits list  Rest assured, it will fast become a favorite of yours!

Although the internet has lots of similar recipes, I like this one from  AllRecipe.com because it includes honey to drizzle on the pieces once served.

As an FYI – recently Pillsbury introduced ‘seamless’ crescent roll dough packages!

INGREDIENTS:
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup white sugar
  • 1 teaspoon Mexican vanilla extract
  • 2 (8 ounce) cans refrigerated crescent rolls
  • 3/4 cup white sugar
  • 1 teaspoon ground cinnamon
  • 1/2 cup butter, room temperature
  • 1/4 cup honey
DIRECTIONS:
  1. Preheat an oven to 350 degrees F (175 degrees C). Prepare a 9×13 inch baking dish with cooking spray.
  2. Beat the cream cheese with 1 cup of sugar and the vanilla extract in a bowl until smooth.
  3. Unroll the cans of crescent roll dough, and use a rolling pin to shape each piece into 9×13 inch rectangles. Press one piece into the bottom of a 9×13 inch baking dish. Evenly spread the cream cheese mixture into the baking dish, then cover with the remaining piece of crescent dough. Stir together 3/4 cup of sugar, cinnamon, and butter. Dot the mixture over the top of the cheesecake. 
  4. Bake in the preheated oven until the crescent dough has puffed and turned golden brown, about 30 minutes. Remove from the oven and drizzle with honey. Cool completely in the pan before cutting into 12 squares.

Chocolate Mint Cheesecake Bars

Chocolate Peanut Butter Cheesecake with Chocolate Glaze

I made this recipe for my little sister’s birthday celebration and everyone loved it!  The recipe is from Martha Stewart and I almost followed it completely.  However, the crust called for chocolate wafer cookies and I can’t find them where I live so I subbed chocolate fudge striped cookies.  The crust was amazing – a treat in itself!

Also – I tend to skip the water bath (see step 5) and yes, sometimes the top of the cheesecakes crack because of skipping that step.  But it’s fine with me since I typically top a cheesecake with a glaze or fruit.

Twix Cheesecake – Delish!

Another wonderful recipe from my friend Danielle!  I made it for my best friend’s grandson’s birthday – he loves Twix.  And what a hit it was! Easy to make too, thanks to Danielle’s instructions.  Check out her blog, Hugs&CookiesXOXO – it’s divine!

Thanksgiving Spiced Cheesecake

This scrumptious spiced cheesecake, in a fabulous chocolate cookie crust, is the perfect winter or Thanksgiving cheesecake!  I was looking for Nabisco chocolate cookie wafers to make the crust but I couldn’t find them at several stores.  How fortunate because instead I decided to make the crust with Keebler Fudge Stripes Dark Chocolate cookies and did it turn out delicious!  You can use most any cookie (Oreos, etc.) you’ll just needed to moisten the crumbs with melted butter so that they will stick together.

There’s another reason why this cheesecake is so delicious.  It’s baked perfectly thanks to an article years ago from Cooks Illustrated magazine that taught me how to bake a cheesecake.  For any recipe that uses 3 or more 8-ounce packages of cream these – I recommend the cooking method detailed below.  You will need to purchase an inexpensive cooking thermometer.

One more thing!  This cheesecake tastes best when served cold.

Here’s another winning recipe from Danielle at Hugs&CookiesXOXO.  Her decadent recipes are always a HUGE hit at my house and this recipe is no exception.  Between the moist graham cracker crust, the lush cheesecake layer with chunks of Reese peanut butter cups AND a chocolate glaze – you know everyone is going to love this!
