Spring Flower Cookies

I realized last night that my daughter and I haven’t made any spring COOKIES lately.  You know I had to google and pinterest search for some fun ideas! Here are the results of my search for the perfect Spring Cookie!

From BHG, a very easy sugar cookie idea:  Roll a dough ball in colored sugar. Snip it in half with scissors, then snip each half into three petals. Gently spread the petals apart and lay flat.

Cinna-bunnies! And more Easter baking…

Popping in again today with two quick FUN Easter ideas for you.

Today, we’re in the kitchen playing with flour and sugar decorating sugar cookies, and I am determined that we will also make some of these adorable Easter Egg Cookies, from Pillsbury:

I’m 99.9% sure our cookies won’t look as good as the ones in the photo, but that’s because I have messy little birdies kiddos.  The good news is that they will still TASTE good, even if the nests are a bit off-kilter.

We are not stopping with cookies, oh-no-we-are-not!  The kids saw the picture of the “Cinnabunnies” (from Betty Crocker) when I was browsing Pinterest, and insisted we make some of our own:

How could we NOT make these??

I know I have mentioned SweetSugarBelle.com more than once, but I just can’t get over how adorable her cookie designs are… and now that SPRING is here, I simply must share her work again.  She has the BEST tutorials and help around, and her photos just WOW me every time.

Yummy Fun Valentine Cookie Recipes

I can’t believe it’s actually February.  It feels like I turned around once, and January was gone in a FLASH!  Thankfully, we still have a little time left to prepare for Valentine’s Day.  You can read our post with Valentine Party Bites here and our MORE Party Bites post HERE….

And today’s post will be devoted to Valentine cookie recipes and tutorials!

I think I may have shared this recipe/tutorial before, but they are just so pretty, and I think perfect for unique (non-heart) Valentine cookies.  From Sprinkle Bakes, colorful spiral cookies:

From Glorious Treats, check out this wonderful recipe and how-to… gorgeous Valentine heart cookies, without a lot of effort (or talent) required! And here’s a video on How To Flood Cookies, that’s the white part below.  I never realized how easy it is to do!

Here is something TRULY unique… AND fat-free and calorie free!!  OK, it’s not an ACTUAL cookie, but I just loved these, and couldn’t help sharing.  Valentine Fortune Cookies, made from scrapbook paper!  Included with the tutorial is a FREE download with circles and fortune cookie print-outs… or you can create your own with her helpful instructions!

You’ve heard of the Pioneer Woman, right?  (Just say yes, even if you haven’t). She has a super-fun chocolate cookie recipe to create Valentine’s Day Cookies (you can buy stencils very inexpensively at craft stores):

Valentine’s Day Party Bites – Dessert Style!

Here at Diva Entertains, we are planning a series of “Party Bite” blog posts in upcoming weeks, and today is the first in that series… and it’s a Valentine  DESSERT “party bites” post!  So… the post is brought to you by chocolate, red velvet and truffles, with a few more yummy things thrown in just for fun!

Hot Chocolate Truffle Balls, from Mel’s Kitchen Cafe.  Totally easy – totally fun!  Drop them in some hot milk for a fabulous flavor explosion.  Or eat ‘em straight up – either way these are winners!

From Smuckers, Strawberry Angel Cookies.  A very easy recipe that uses a angel food cake mix.  Although the recipe calls for sugar free preserves (which is great if your on a low sugar diet), I made them with the real deal!


From Peace of Cake, Red Velvet Cookies:  So simple (use a red red velvet cake mix)…so good!  Cream cheese is one of the 5 (yes, only 5!) ingredients so you know it is going to be good!

Christmas Cookies!

Last week, we talked about Christmas Cupcakes… and today, we’re continuing with the baking theme and looking at SUPER FAB decorated Christmas cookies photos. Well – we aren’t just looking – we have FAB tutorials… meaning, you can MAKE most of these cookies yourself!

From one of my very favorite cookie makers, Sugar Belle, check out the incredible step-by-step tutorial for making fun Santa cookies.  She also provides delicious royal icing recipe.  And – if that isn’t enough – check out her cooking decorating videos – pure awesomeness:

I am absolutely in LOVE with the idea of edible frosting sheets, and printing on them with edible color.  Check out what Sweetopia did with them!  And yes, you can make these, but only if you have edible frosting sheets and an edible color printer.  If you do a lot of decorating/baking, it might be worth getting – HERE is a link to a set at Amazon.com!  A bit too DIY?  Etsy’s Queen of Tarts offers several edible vintage Holiday transfer sheets for purchase!

Something a little different, but oh, so fab, are these Spiral Christmas cookies from Sprinkle Bakes.  These easy Christmas sugar cookies are sure to be a HUGE hit (and her pictures are gorgeous!).  I am definitely making some of these with my kids this week!

For a really FUN idea (again, especially for making with the kids), how about a Marshmallow Melted Snowman cookie, tutorial from Truly Custom Cakery:

White the next photo from All Sorts is not specifically a tutorial, I thought it might just be easy enough to figure out.  Heart shaped sugar cookies, decorated and sprinkled, and framed with candy canes!  LOVE!

Greek Honey Walnut Cookies

Greek Honey Cookies

These luscious Greek honey walnut cookies have a fabulous  WOW factor to them.  Their presentation couldn’t be prettier and they are absolutely *delicious*.  At first I was put off by the recipe because it called rolling out the dough which often can be a sticky mess.  But that so wasn’t the case with this particular Greek cookie recipe.  And that’s because of the cream cheese in the dough – it makes it a breeze to work with.

I also purchase walnut bits, not pieces.  That’s a big time saver – no chopping necessary.  They are a bit more expensive but, if time is short, it’s worth the splurge.

Chocolate Peppermint Candy Cookies

York Peppermint Patty Cookies

These beautiful chocolate peppermint cookies are my new ‘annual’ Christmas cookies.   I tend to give homemade cookies and cakes to everyone – neighbors, the mailman, my doctor offices, my UPS and FedEx deliverymen, etc.  They are going to be delighted with this year’s choice!

I saw these cookies in the December 2011 issue of the Rachael Ray magazine and I only tweaked them a tad by adding a top layer of chocolate ganache because, well…what’s not better with more chocolate:)?  However, if you would like to save yourself this step they are still scrumptious without it (the cookie on the far left doesn’t have the added chocolate topping).

Chocolate York Peppermint Patty Cookies, 24 cookies

  • 1 1/2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 1/2 sticks (6 oz.) unsalted butter, slightly softened
  • 1 egg
  • 24 miniature (about 1 1/2-inch) peppermint patties, such as York, unwrapped and chilled
  • chocolate ganache frosting* (optional)
  • 6 oz. white chocolate (not chips), chopped
  • Peppermint candy canes or candies, crushed or finely chopped
  1. Using an electric mixer, beat the flour, cocoa powder, both sugars, salt and baking soda on low speed. Beat in the butter, then the egg. Turn out the dough onto a large piece of plastic wrap and flatten into a disk; seal. Refrigerate until firm, about 1 hour.
  2. Preheat the oven to 350°. Line 2 large cookie sheets with parchment. Working with 1 tbsp. of dough at a time, use your fingers to evenly encase each peppermint patty with dough. Place on the prepared pans and smooth the dough with your fingers. Bake, switching the pans halfway through, until just firm to the touch, about 15 minutes. Remove the pans from the oven and let cool slightly. Transfer the cookies on the parchment to a rack to cool completely.
  3. If using ganache (see recipe below):  using a spoon or frosting spatula, put enough ganache on each cookie so that when spread, the cookie is mostly covered.  Then proceed with step 4.
  4. Meanwhile, in a double boiler or small, heatproof bowl set over a small saucepan of simmering water, melt half of the white chocolate, stirring until melted. Remove from the heat and stir in the remaining white chocolate until smooth. Using a large spoon, drizzle the white chocolate over the cookies. Sprinkle immediately with the crushed peppermint candies. Let set completely before serving or storing.

Chocolate Ganache

  • 3/4 cup heavy whipping cream
  • 8 oz. chocolate (chocolate chips, etc.)

Pour whipping cream in a small sauce pan, bring to a simmer.  Turn off heat and add chocolate.  Shake pan to cover chocolate.  Let sit 5 minutes and then whisk until completely blended.  Proceed with step 3.

Glazed Sugar Cookies

Although my choice of frosting color may have been a poor choice (green? what was I thinking?), making these scrumptious glazed sugar cookies won’t be!  Different that most sugar cookies, these are thicker, have wonderful flavor from a hint of lemon extract (optional), are softish in the center and dipped in the glaze for full top-of-cookie coverage (When it comes to frosting I do not believe in the “less-is-more” theory).

Unlike so many sugar cookie recipes, this dough is a pleasure to work with.  It doesn’t need to be chilled once made in order to be rolled out – you can start cutting out your cookies immediately.  And as long as you keep your work surface lightly floured there are no ‘sticking’ issues.  The frosting/glaze is delicious and hardens nicely for bagging but is not at all rock hard like royal icing.  I’m sure you’ll love it!

Whenever I made these cookies I make them in two sizes:  I use a round, 2 1/2″ diameter cooking cutter for the large and a round 1 1/2″ diameter cooking cutter for the small.  I love having small ones in my freezer – they are perfectly sized when I’m craving something sweet but don’t want to overindulge on the calorie count.

The sugar cookie recipe comes from an excellent baker friend of mine that posted her recipe at www.eat.at.  along with the frosting recipe. I’ve modified the recipe below to include an extra egg yolk and to call for lemon extract instead of the original almond.

Chocolate Chip Peanut Butter Cookie Recipe – with Butterfinger Crunchies!

I’ve always loved Butterfinger candy bars.  The mixture of a chewy, peanut buttery confection covered in chocolate – scrumptious!  And when I saw this Bon Appetit recipe for Chocolate Chip Peanut Butter Cookies that included Butterfinger candy bar pieces in the batter I just had to try it.  So glad that I did.  All my taste testers (family, friends, our postwoman, our local pharmacy staff…well, you get it.  I always bring baked goods where ever I go:) were too – they loved it.

Keys to Success: 1) I think using a natural peanut butter really makes a difference.  For baking, your best option is a ‘no-stir’ natural peanut butter (otherwise you have to hand mix the jar of peanut butter which can be quite a pain), and 2) I prefer using unsalted butter for baking since it allows me to control the salt added to a recipe.

Also, I prefer to have my cookies a bit thick and a tad soft in the middle.  That doesn’t typically happen when you bake the cookies immediately after making the cookie dough – the cookies tend to be more flat.  If you would prefer a thicker cookie simply shape the cookie into balls (about 1 1/2″ to 2″ balls, depending on the size you want the cookies to be) and refrigerate the balls for about an hour prior to baking.  Flatten slightly before baking.

Finally, – these cookies are awesome as is, but if you would like, you can sprinkle the tops of the cookie with turbinado (raw) sugar prior to baking.  The cookie on the left has had some sprinkled on it.
