If you want to achieve “Rock Star” status with your kids, spouse, friends, relatives, well just about with anybody…bake them some of these incredibly delicious chocolate donuts with chocolate glaze.

Let me start off by saying that this was the first time I made donuts.  And it couldn’t be easier.  You don’t even need a mixer; just whisk the ingredients by hand.  Put the batter into a ziplock bag, snip an end off and fill the donut pan 3/4’s full and 8-10 minutes later you have *perfect* chocolate donuts.

I bought my non-stick donut pan on Amazon for less than $10.  And the recipe below is an adaptation from a baked chocolate donut recipe in the cookbook “Mini Donuts” from Jessica Segarra that I ran across while visiting our local library last week.

Lemon Mousse – Refreshing and Light Tasting!

We are lovers of lemons in our family!  I cook and bake with them constantly..

Lately I’ve been on the lookout for great lemon dessert recipes and I came across this one from Ina Garten.  Just like the reviews stated – it was fab! Light, bright and refreshing.  Ina puts it all in a big bowl to serve but I chose to serve it in individual glasses.

We had a lot of company last week that included lots of kids so we decided to have some fun and try out this loaded S’Mores that I can across in the June/July 2013 issue of Taste of Home.  Everyone loved them! I’m sure you will too.  I’ve adapted the recipe slightly.


Frozen Chocolate Peanut Butter Bananas with Almonds

These will definitely be *the best* frozen chocolate bananas you’ve ever had thanks to the addition of peanut butter to the chocolate dip and than a good roll in almond pieces.  The recipe, from Laura Rucker’s Got Chocolate Blog, is easy enough for kids to make.   You simply melt a bit of peanut butter with the chocolate until blended and smooth.  Dip the banana in it, then sprinkle with almonds or your choice of nuts.

Chocolate Peanut Butter Ice Cream Pie with Nutter Butter Cookie Crust

This recipe is a bona fide winner based on feedback from family and friends.  Especially from my nephew and his girlfriend – foodies that take their dessert very seriously:)

The recipe below is based on this  peanut butter dessert  recipe being made in a springform pan.  However, it can also be made in a pie pan.  For the latter, you’ll only need about 3/4’s of the crust mixture and, instead of 1 quart each of the chocolate and vanilla  cream, you’ll only need about 2 cups each.  As for the peanut butter, 1 cup for the pie plate version.

How gorgeous are these watermelon popsicles?  I made them for a neighborhood party and they disappeared fast.  All the moms wanted the recipe!  Credit for this fabulous watermelon ice pop recipe goes to Kelly at the Eat YourSelf Skinny Blog (and for the pics!).  And true to her name, these pops only have 78 calories each!
