Chocolate Pecan Brownie Pie

Tar Heel Pie Recipe

This decadent brownie pie recipe comes from Cooks Country Magazine, however, they refer to it as Tar Heel Pie.  What I’m sure you’ll call it is “delicious”.  I knew I had to make it when the last line of description read “For people who like brownies so fudgy and barely cooked that they are too messy to out out of hand, this pie was a a must”.  Hello – I’m waving my hands!!!

Double Chocolate Cream Pie – TOTALLY DIVINE!

homemade chocolate pie

I recently started subscribing to Oprah’s magazine and I absolutely love it!  Great articles AND great recipes.  Like this double chocolate cream pie.  It starts off with a delicious pastry crust that’s easy to make.  Follow that with a layer of chocolate pie filling (think pudding but better) that is absolutely dreamy.  Top if off with a billowy chocolate whipped cream and you know you’ve got a winner!

If the recipe seems like too much work (although it truly is worth it) here are some shortcuts you can take:

  • You can use a frozen pie crust and just pre-baked it as directed.
  • You can use chocolate whipped topping in the tub for the topping.

Decadent Chocolate Peanut Butter Pie

To the great delight of family and friends, I have made this delicious chocolate peanut butter pie with cream cheese from Taste of Home* many times.  Between the chocolate ganache glaze and creamy peanut butter mousse cheesecake layer – it really is decadent!

Fresh Or Frozen Peach Pie

peach pie using frozen peaches

Why is this pie from the Food Network do darn great?  First and foremost – it has to do with the spices.  It includes cinnamon, cardamon and allspice which lends incredible taste without overpowering (these are the same spices I use when I make an apple pie).  Second, you can use fresh or frozen peaches in the pie.  Gotta love that!

Blueberry Hand Pies

easy blueberry pie

This fabulous blueberry hand pie recipe is courtesy of Toronto’s Food & Drink Magazine, a beautiful free magazine handed out at their wine stores.  I’m *so* fortunate to have a dear friend that always picks one of for me – the recipes are divine!

A single serving easy blueberry pie, this hand pie is easy to make using frozen puff pastry.

Chocolate Peanut Butter Ice Cream Pie with Nutter Butter Cookie Crust

This recipe is a bona fide winner based on feedback from family and friends.  Especially from my nephew and his girlfriend – foodies that take their dessert very seriously:)

The recipe below is based on this  peanut butter dessert  recipe being made in a springform pan.  However, it can also be made in a pie pan.  For the latter, you’ll only need about 3/4’s of the crust mixture and, instead of 1 quart each of the chocolate and vanilla  cream, you’ll only need about 2 cups each.  As for the peanut butter, 1 cup for the pie plate version.

Decadent Chocolate Peanut Butter Pudding Pie

peanut butter pudding dessert

This rich chocolate peanut butter dessert is over-the-top delicious!  With an easy homemade pudding recipe that just takes moments to make.  And although I made it with a homemade pie crust next time I’ll use a graham cracker crust.  So much easier and it will taste just as good (maybe even better)!

This recipe was based off one found in a Saveur magazine but I forgot to add the whipped cream to both puddings to lighten it.  What a fortuitous mistake!  So much richer this way.

Peach Blueberry Tart Recipe – Divine!

blueberry peach pie

This incredibly delicious peach blueberry tart has fast become one of my favorite dessert recipes!  You can use frozen fruit or fresh so that it can be made and shared at any time of the year.  If using frozen, do make sure you thaw the fruit prior to putting together.  The first time I made it I overlooked the directions that said to use ‘thawed’ and although still delicious, the fruit needed a bit more cooking.

This recipe and photo comes from the Oct/Nov. 1012 issue of Taste of Home (mine looks almost as good as theirs!).  Easier than a peach blueberry pie because you simply pat the crust into the tart pan, it is every bit as good.

Easy No-Bake Chocolate Peanut Butter Pie

I served several of these delicious chocolate peanut butter pies at a party last week and not only wasn’t there a single piece left, at least 15 guests asked for the recipe.  It’s very easy to be make but can be even easier if you replace the homemade pretzel crust with a store-bought graham cracker crust and the chocolate ganache with hot fudge from a jar.

This pie can be made way in advance (a month or more) and frozen until needed.

Pie Pops – Fun & Delicious! (and easy!!!!)

dessert pops

As mini desserts, such as cake pops, continue to grow in popularity, so do pie pops!  These fun little desserts, just a few bites worth, can be filled with most pie fillings (fruit, pumpkin, pecan, etc.).  Here Katie from Epicurean Mom, shares with us her pie pops recipe as well as her beautiful photography.  And I, after making several different pie pop flavors, will chime in with some time-saving tricks and display ideas.

While nothing tastes as good as a homemade pie crust – if you are short on time or talent, don’t hesitate to use refrigerated pie crusts.  Pillsbury makes a good one and it will shave off so much time off your prep.  You could also use canned pie fillings if you don’t have a favorite recipe.

wedding dessert buffet

Cake and pie pops look amazing in a wedding dessert buffet or set at individual place setting in your home or at a reception.  I buy floral foam and colored floral foil (all can be found very inexpensively at craft stores) and wrap the foam in the foil and then stick the pie pops in them in rows.  Floral foam comes in many sizes so you can do a large display or a fun single one.
