I absolutely adore S’mores and think they are meant for more than a summer treat!  So here it is February and I’m enjoying this divine Smores Cheesecake recipe from Southern Lady magazine. You do need a candy thermometer to make this recipe but it is so worth it!

I love using puff pastry to make elegant, delicious appetizers and desserts; it’s a huge time saver.  This apple puff pastry dessert comes from one of my favorite magazines, the free Food & Drink magazine put out by the Ontario Liquor Control Board.

Chocolate Espresso Ice Box Cake

I have a friend that loves tiramisu and a husband that doesn’t.  To satisfy both, I made this fab recipe from Woman’s Day magazine for a Chocolate Espresso Ice Box Cake.  Using ladyfingers as the base that are brushed with espresso syrup and then piled high with chocolate creaminess; it’s a sophisticated take on an old-time favorite.

Homemade Baked Chocolate Cake Donuts

If you want to achieve “Rock Star” status with your kids, spouse, friends, relatives, well just about with anybody…bake them some of these incredibly delicious chocolate donuts with chocolate glaze.

Let me start off by saying that this was the first time I made donuts.  And it couldn’t be easier.  You don’t even need a mixer; just whisk the ingredients by hand.  Put the batter into a ziplock bag, snip an end off and fill the donut pan 3/4’s full and 8-10 minutes later you have *perfect* chocolate donuts.

I bought my non-stick donut pan on Amazon for less than $10.  And the recipe below is an adaptation from a baked chocolate donut recipe in the cookbook “Mini Donuts” from Jessica Segarra that I ran across while visiting our local library last week.

Another wonderful recipe from my friend Danielle!  I made it for my best friend’s grandson’s birthday – he loves Twix.  And what a hit it was! Easy to make too, thanks to Danielle’s instructions.  Check out her blog, Hugs&CookiesXOXO – it’s divine!

Chocolate Glazed Peanut Butter Brownies DIVINE

These chocolate glazed, peanut butter cream topped brownies truly are *divine*.  Sinful?  Maybe.  Worth it?  Definitely.

I found this recipe on the Womans Day (magazine) website and have modified it slightly.  Although there are 3 steps to it, they are all quite easy and take only minutes.

Important Note: Depending on what kind of peanut butter you use (I always use all- natural) and how thick the peanut butter is – the “creaminess” of the peanut butter layer could vary.  If it is too stiff (mine was), add 1 Tbsp. of heavy cream (or milk) at a time until it achieves your desired creaminess.  It should be rich, thick and smooth.

Lemon Mousse – Refreshing and Light Tasting!

We are lovers of lemons in our family!  I cook and bake with them constantly..

Lately I’ve been on the lookout for great lemon dessert recipes and I came across this one from Ina Garten.  Just like the reviews stated – it was fab! Light, bright and refreshing.  Ina puts it all in a big bowl to serve but I chose to serve it in individual glasses.

I have been making these peanut butter cookies for over 10 years.  They are easy to make (4 ingredients), have loads of peanut flavor, and because they don’t use include flour, are the perfect Passover cookie recipe!  If you’d like – you can add mini chocolate chips or chopped peanuts to the recipe.
