I have been making these peanut butter cookies for over 10 years. They are easy to make (4 ingredients), have loads of peanut flavor, and because they don’t use include flour, are the perfect Passover cookie recipe! If you’d like – you can add mini chocolate chips or chopped peanuts to the recipe.
Flourless Peanut ButterCookies Recipe, makes 18 to 24 cookies
- 1 cup natural peanut butter
- 1 cup sugar
- 1 large egg, lightly beaten
- 1 teaspoon vanilla extract
Preheat the oven to 350 degrees F and place racks in the upper and lower third of the oven. Spray cookie sheets with non-stick spray.In a medium bowl, mix the peanut butter, sugar, egg and vanilla until well combined. Spoon 1 tablespoon of mixture about 1 inch apart onto sheets. Flatten the cookies with the tines of a fork, making a crosshatch pattern on the cookies.Bake until golden around edges, about 10 minutes, switching the position of the pans halfway thorough baking. Let set 10 minutes on cookie sheets and then transfer to racks to cool. Repeat with the remaining dough.
